Eleven Madison Park, a renowned New York City restaurant with three Michelin stars and consistently ranked among the World’s 50 Best, will reopen its dining room in June offering a fully plant-based menu.
Owner Daniel Humm Justifies the Shift
Chef and James Beard Award winner Daniel Humm explained the decision, stating, "We have always operated with sensitivity to the impact we have on our surroundings, but it was becoming ever clearer that the current food system is simply not sustainable, in so many ways." He confirmed the restaurant will eliminate all animal products from its menu.

This move follows several other notable developments in the plant-based food sector. Epicurious recently ceased publishing beef recipes, replacing them with vegetarian options. Yelp.com ranked Kelley Farm Kitchen in West Virginia as the top restaurant of 2021. Furthermore, food influencers like Joe Yonan of the Washington Post and Mark Bittman are increasingly promoting plant-based cuisine.
